In The Kitchen: Apple cheddar kale salad

APPLE CHEDDAR KALE SALAD

Ingredients:

2 tablespoons apple cider vinegar
1 teaspoon maple syrup
salt
pepper
1-2 cloves garlic, finely minced into a paste
3 tablespoons olive oil
1 large bunch of kale, finely chopped (stems removed)
3 apples, peeled, cored and chopped
1 cup freshly grated sharp cheddar cheese
3/4 cup sliced almonds

Process:

In a small bowl whisk together the vinegar, maple syrup, garlic, and a healthy pinch of salt and pepper. Now slowly whisk in the olive oil to form a vinaigrette. Toss and massage the kale with the vinaigrette until well combined. Next toss in the apples, cheddar cheese, and almonds. Mix until combined. Refrigerate for at least 10 minutes. Enjoy!
