Barbecue sauces and rubs

Carolina Barbecue Sauce

Yield 1 quart

Ingredients:

  • 1 quart Apple Cider Vinegar
  • 1 cup Light Brown Sugar
  • 1 Tablespoon Cayenne Pepper
  • 2 Tablespoons Dried Mustard
  • 2 tsp. Sweet Paprika
  • Dash of Hot Sauce
  • 1 tsp. Salt

Instructions:

Combine all ingredients and whisk until sugar is dissolved. Refrigerate until needed. Use as a mop sauce or for flavoring pulled pork.

Barbecue Spice Rub

Yield 1 quart

Ingredients:

  • 1 oz. paprika
  • 1 oz. Chili Powder
  • 1 oz. Kosher Salt
  • 1 oz. Sugar
  • ¾ oz. Ground Cumin
  • ¾ oz. Dried Mustard
  • ½ oz. Dried Thyme
  • ½ oz. Dried Oregano
  • ½ oz. Curry Powder
  • ¼ oz. Cayenne Pepper

Instructions:

Combine all ingredients.  Use to season braising meats or ribs prior to cooking.

Barbecue Sauce

Yield 1.5 quart

Ingredients:

  • ¼ cup vegetable oil
  • 1 cup Spanish onion, diced small
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 each Jalapeno pepper, seeded and minced
  • 1 each Dried Ancho Chili Pepper, stem removed
  • ½ Pineapple, peeled, cored, and diced ½ inch
  • ¼ cup Worcestershire Sauce
  • 4 oz. Brown Sugar
  • 1 cup Cider Vinegar
  • 1 tablespoon Ground Cumin
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cayenne Pepper
  • 1 tablespoon Dried Oregano
  • ¼ cup Soy Sauce
  • 2 cups Ketchup
  • ½ tablespoon Instant Espresso Powder
  • 1 each Dried Ancho Pepper

Instructions:

1. In a heavy-bottomed pan, heat oil and sweat the onions until translucent.  Add the garlic, ginger, jalapeno pepper and ancho chili pepper, and pineapple.  Cook for another 5 minutes. 

2. Add the remaining ingredients except for the espresso powder.  Simmer for 45 minutes, stirring occasionally to prevent mixture from burning.  Add the instant espresso powder and blend with an immersion blender.  Chill until needed.  Use as a mopping sauce or serve on the side.

Safety tip: Always put what you will use on raw meat in a separate container.  Do not place the mopping sauce on the table if it has come in contact with raw meat.
