Barbecue sauces and rubs
Carolina Barbecue Sauce
Yield 1 quart
Ingredients:
Instructions:
Combine all ingredients and whisk until sugar is dissolved. Refrigerate until needed. Use as a mop sauce or for flavoring pulled pork.
Barbecue Spice Rub
Yield 1 quart
Ingredients:
Instructions:
Combine all ingredients. Use to season braising meats or ribs prior to cooking.
Barbecue Sauce
Yield 1.5 quart
Ingredients:
Instructions:
1. In a heavy-bottomed pan, heat oil and sweat the onions until translucent. Add the garlic, ginger, jalapeno pepper and ancho chili pepper, and pineapple. Cook for another 5 minutes.
2. Add the remaining ingredients except for the espresso powder. Simmer for 45 minutes, stirring occasionally to prevent mixture from burning. Add the instant espresso powder and blend with an immersion blender. Chill until needed. Use as a mopping sauce or serve on the side.
Safety tip: Always put what you will use on raw meat in a separate container. Do not place the mopping sauce on the table if it has come in contact with raw meat.
