Chevre Rolled Grapes
Yield: 30 pieces
These grapes are fantastic for a cocktail party! They are easily made the day before-we would recommend rolling in nuts on the day of the party to keep them crunchy.
Ingredients:
30 each Grapes, seedless, washed (red and/or green)
8 ounces Chevre goat cheese, room temperature
½ cup Pistachios, shelled, roasted, skinned, salted
Method:
-In a food processor, pulse the pistachio nuts until they are finely ground, like the texture of crushed pepper.
-Coat the grapes with a small amount of the soft goat cheese in your hands by molding the cheese around the grapes, and gently rolling into a ball.
-Toss the grapes with the ground nuts until covered, gently pushing the nuts into the cheese so that the grapes are fully covered and round and resemble a green grape.
-Place onto a platter, piling them so that they look like a bunch of grapes.
We like to garnish with real grape leaves and vines.
