We are continuing to spread Channel 3 Cheer which is when WCAX staff share their favorite holiday recipes. Tonight, Reporter Keith McGilvery is up with his mom to make Cranberry Christmas Pudding Pie.
Cranberry Christmas Pudding Pie
with Keith McGilvery and his mom Jane
Ingredients
12oz fresh cranberries
1/2 cup light brown sugar
1/2 cup chopped walnuts or pecans
1/2 cup granulated sugar
1/2 cup flour
5 and 2/3 tablespoons butter
1 egg
Spread cranberries on buttered 9-inch pie plate
Sprinkle with brown sugar and nuts
In a small bowl beat egg until thick, gradually add sugar until blended, then add melted butter and flour and beat well.
Spread batter over cranberries
Bake at 325 for 45 minutes
