John Strout from Texas Roadhouse joins us with a recipe for your final March Madness parties.
2 Tbsp. Olive Oil
1 ½ c. Diced Ham
½ c. Diced Red onion
½ c. Diced Jalapeno Peppers
1 ½ c Shredded Jack Cheese
1 ½ c. Shredded Cheddar Cheese
6 c. Large Tortilla Chips
1 Medium Can (14oz) Diced Tomatoes Drained
1 ½ c. Diced Fresh Pineapple Drained
Pre-heat oven to 400 degrees.
Brown ham in a skillet then remove to plate.
Use the same pan to Sautee the onions and peppers until just softened, add back the ham, stir and remove from heat.
In an oven safe dish, put half of the chips, then spread half of the cheeses, half of the onion/pepper/ham mix, half of the pineapple and half of the tomatoes.
Repeat all layers until all ingredients are used.
Bake for 5-10 minutes, until the cheese is melted and bubbles.
