Cabot chef prepares cheese dishes

June is Dairy Month. Cabot's Craig Gile and Chef Jimmy Kennedy celebrate this month with cheese dishes.

Dip into one of these three recipes which include Vermont BLT frittata, salad and s'mores.

Beet and Grape Fruit Salad and Cabot Clothbound Cheddar

3 cups cooked beets

3 or 4 handfuls mesclun or salad greens

1 medium red onion

2 grapefruits

1 cup Cabot Clothbound Cheddar


Vermont BLT Frittata

6 beaten eggs

1/2 cup whole milk

2 handfuls of fresh arugula

6 slices of bacon

1 cup cherry tomatoes

1 cup Cabot Seriously Sharp cheese

1 TBS Cabot Butter


Cheddar S'mores

8 graham cracker cookies

8 (3/4 oz.) Cabot cheese

2 (1.55 oz.) Equal Exchange chocolate bars
