What's Cooking: Goat Cheese Cake on Salad

Chef Robert Barral from Cafe Provence in Brandon joins us this morning with a tasty summer recipe.

Goat Cheese Cake On a Winter Salad With Bacon and Maple Syrup vinaigrette.

Recipe for 4 People

 Goat Cheese 12oz


Chives ½ bunch

Cracked black pepper 1 tsp

Bread Crumbs 1 cup

Mixed Greens 2 cups

Walnut ¼ cup

Dried Cranberries ¼ cup

Red wine Vinegar ¼ cup

Balsamic vinegar ¼ cup

Vegetable oil 1 cup

Whole butter 2 oz@

· Make the goat cheese mix.

In a bowl, mix the goat cheese with chopped chives, salt, pepper. Shape like hockey pock and dredge with bread crumbs. Reserve until service time.

· Make the vinaigrette

In a pan, sauté the sliced bacon till golden brown. Remove all the fat when golden brown and add the walnuts and the dried cranberries. Deglaze with the red wine vinegar, reduce half way down then add the balsamic vinegar and reduce one more time half way down. Add the maple syrup, bring to the boil and finish with the vegetable oil.

· Finish the plate:

Sauté the patties in a pan with whole butter until golden brown then place on the plate. The salad is lightly drizzled with salt, pepper lemon juice and oil. The vinaigrette goes on the outside, all around the goat cheesecake. Serve warm
