What's Cooking: Peach Recipes

Chef Tom Bivins from Crop Bistro & Brewery joins us with some delicious peach-themed recipes for summer.

Peach Melba:

2 peaches, blanched and shocked, peeled and sliced in half

½ cup raspberry puree

4 scoops vanilla ice cream

1 cup whipped sweetened cream

Place one spoonful of sweetened cream on center of bowl. Top with a scoop of vanilla ice cream in center of bowl. Top with half of peach or slices of peach. Drizzle with raspberry puree and place a small amount of whipped sweetened cream on the side of the peach halve.


Peach Compote:

4 peaches, blanched and shocked, remove skins

2 Tb. Butter

1 cinnamon stick

1 all spice berry

1 strip orange peel

¼ cup orange juice

Combine ingredients and simmer lightly for 30 minutes, stirring frequently.

Serve warm over French toast or pancakes.


Poached Peaches:

4 peaches, blanched and shocked, peeled

1 cup sugar

1 cup soda water

½ cup Brandy

1 vanilla bean

1 cinnamon stick

2 star anise

3 peppercorns 

Combine the sugar, soda water, brandy and spices. Stir to combine. Add the peaches and bring to a low simmer. Cook for 10 minutes or until knife tender.

Remove from simmering liquid. Reduce liquid to about ¼ cup. If desired, stir in 2 TB cold butter to add richness to the sauce. Serve peaches with whipped cream and drizzle with poaching liquid. Or serve on pound cake or other rich cake with whipped cream or ice cream.
