Chef Michael Kloeti's mint lime granite

When it's hot outside you might not always feel like heading into the kitchen to cook. However, Chef Michael Kloeti from Michael's on the Hill in Waterbury has a summer dessert that only takes minutes and four ingredients.

Mint Lime Granite

Yield 4 servings


½ Cup Lime juice, fresh

½ Cup Water, cold

½ Cup Granulated sugar


Place water and sugar into a pot and bring to a simmer.

Turn off heat and add the mint. Allow mint to steep for 10 minutes.

Once cool, add the lime juice.


Freeze mixture in a small container or pan.

Scrape the frozen ice in its container with the prongs of a fork, then scoop up and serve in a chilled glass.

For a decadent finish, drizzle with a shot of tequila.
