What's Cooking: Peach Salad

SOUTH BURLINGTON, Vt. -

Chef Cody Vasek with the Trapp Family Lodge in Stowe joins us with a peachy summer salad recipe.

Peach Salad, local feta cheese, honey-thyme vinaigrette

For 4 Portions

Peaches:

4 each peaches

sea salt

Cut peaches in ½, quarter the peaches, add sea salt

Vinaigrette:

¼ cup honey ¼ fresh lemon juice

¼ cup olive oil 1tbs. thyme leaves

salt to taste pepper

Add all ingredients and blend well.

Mix greens (pete's greens)

1# mix greens

3 each red endive, sliced

To Serve:

Place 3 sliced peaches on bottom of plate, drizzle vinaigrette on peaches. In a mixing bowl add greens, feta cheese, red endive and 3 sliced peaches, salt and pepper- add a little more feta on top.
