Fresh herbs are great and for most people when they think of herbs, they think of herbs you eat the leaves of such as basil, but there are a lot of other herbs, such as cilantro, which have seeds you can eat, too. Cilantro seeds become coriander. You can also eat fennel or dill seeds. You can use these seeds for cooking and for storing.
If you are going to cook with dill seeds you want to roast them first to bring out the flavor. Then you can put them in soups and breads. There are many different ways to use them.
The important thing about harvesting seeds is doing it at the right time.
If you see the flower that's nice and yellow, you want to let that one keep growing until the seeds form. If you harvest too early, you won't get any seeds. If you harvest too late, all of the seeds have dropped off onto the ground.
You want the flower heads to be somewhere in between for the best time to pick. First, cut the stem. Then put the stem upside down in a dry, airy place. So you don't lose the seeds, place them in a brown paper bag and then just seal it up. Hang the stems with the bag in place. What will happen over time is as the seeds dry, they drop right into the bag. You can shake it, too, to help them drop. You can hear them shaking in there. After you've got most of the seeds, you can store the seeds in a glass jar. The key with the glass jar is if you see any condensation inside after a few days of having seeds in there, they're probably still too wet. You want to take them out, let them dry a few more days, and put them back in. Then you'll have the seeds all winter for great eating.
