Singleton's Market in Quechee recently won the great Mac and Cheese Challenge in Windsor.
Jess Hathorn of Singleton's and Lisa Pierce came up with the recipe.
Award winning mac n' cheese from Singleton's Market
- 1 lb macaroni- cooked
-1 c. Vermont Farmstead Alehouse Cheddar
-1 c. Singletons Smoked Cheddar
-1 c. muenster
-1/2 stick butter
-1/2 c. flour
- 4 cups 1/2 & 1/2
-2 cups shredded Singletons Smoked Ham
-2 cups Singletons buttered breadcrumbs
- salt & pepper
Cook macaroni, drain and set aside. In a saucepan melt butter and add flour
and cook until browned then whisk in cream and salt and pepper to taste.
Cook until slightly thickened and half of the cheese and shut off the
burner. Add remaining cheese and smoked ham. Once the cheese and ham are
incorporated, mix in the macaroni. When pasta is incorporated put in a 2
quart greased baking dish. Top with buttered breadcrumbs. Bake at 400 until
golden brown and bubbelly.
