What's Cooking: Green bean and mushroom casserole

Spruce up your holiday green bean casserole with this recipe.

Chef Michael Kloeti whipped up this casserole for the Morning Show. "This isn't your mother's casserole. This is your grandmother's casserole."

This recipe works best with fresh produce.

Thanksgiving Green Bean & Mushroom Casserole

 

Makes 4 Portions

Ingredients:

10 ounces mushrooms

4 ounces white wine

6 tablespoons butter

8 ounces heavy cream

1 teaspoon garlic, chopped

2 teaspoons shallots, chopped

2 teaspoons mixed herbs-parsley, rosemary, thyme, tarragon

6 ounces green beans, washed and picked

6 slices Crispy bacon, crumbled (optional)

salt, freshly ground black pepper to taste

Directions

Over high heat, melt butter in a skillet, then sauté mushrooms until golden brown.

Add garlic and shallots, and continue to sauté until onions and shallots are translucent.

Deglaze the pan with the wine and add the cream, then add the green beans.

Simmer for about one minute until it is a sauce consistency and beans are al dente.

Add herbs and season to taste with salt and pepper.

Just before serving, top with crispy-like bacon, or your favorite crispy item such as

crispy fried shallots.
