Peru, NY, woman pumps out hundreds of holiday pies

PERU, N.Y. -

Every fall, Patti Sheehan of Rulfs Orchard bakes close to 600 pies for her customers to bring home for their Thanksgiving feasts. It takes her takes six weeks to get ready for the pie rush.

"Everything has to be prepared ahead of time," she said. "The boxes have to be put together, the sugar mixtures for apple pies and pumpkin pies have to be prepared and put away."

All of this planning is for the long two days of work ahead of Turkey Day.

"About to take on 40 hours of making pies straight through, have to work through the night," Sheehan said.

She started baking her pies in 1987. These pies are special orders, and Sheehan's loyal customers have their names on the list year after year.

"If you see a name you're not familiar with, it gets your attention," Sheehan said.

Rulfs Orchard bakes all sorts of pies, from apple to blueberry to pumpkin. And what's Thanksgiving dinner without some homemade apple pie?

"Well, we've been coming here for 30-some-odd years and can't do without the fresh apples, vegetables and especially the pies," said Steven Schiff of Plattsburgh.

"Usually try to come at least around Thanksgiving time and a couple times during the year on my way up through to Plattsburgh," said Fran MacDougal of Elizabethtown.

Sheehan says on Thanksgiving, it's rare she's left with a single pie.

The bakery at Rulfs Orchard is open year-round. Sheehan rolls more than 9,000 pie crusts a year.
