We are making egg nog for Holiday Cocktail Week, but it's not the kind you'll find in the grocery store.
Christopher Maloney of Hen of the Wood Burlington teaches us how to make Puerto Rican egg nog called Coquito.
2 1/4 c water
1 cinnamon stick
2 1/3 c sugar
12oz can evaporate milk
14oz can unsweetened coconut milk
1/4 c vanilla extract
3 large egg yolks
2 1/4c white rum (puerto rican)
1. Simmer water, zest of the 2 limes, & cinnamon stick for 15 minutes. Strain and chill.
2. Once water mixture is cool, whisk sugar, coconut milk, evaporated milk, vanilla extract, egg yolks, and rum together until sugar is completely dissolved.
3. Chill for 1 hour.
4. To serve, shake egg nog with a few pieces of ice to froth and pour into small glass vessel - a shot glass is traditional. Top with freshly grated nutmeg... enjoy!
