What's Cooking: bacon wrapped dates

Arvad's Grill and Pub's Chef Mike Kennedy had our mouths watering with his bacon wrapped dates.

Bacon Wrapped Dates

(With Gorgonzola and Balsamic Reduction)


1 pkg. whole Pitted Dates

3 oz. crumbled Blue Cheese

1 lb. bacon

2 cups Balsamic Vinegar


Pour balsamic vinegar into a small, heavy bottomed pot and simmer on medium heat until it has reduced to the consistency of maple syrup. Slice down through the dates with a knife (opening to opening). Unfold and stuff with blue cheese and wrap back up, continue with the whole package of dates. Cut bacon slices in half and lay out on a cutting board or sheet. Place stuffed dates at the beginning of the bacon and wrap the bacon around and roll, place dates on a sheet pan with the bacon seam side down. Bake at 425 degrees for about 20 minutes or until bacon starts to get crispy. Serve on a plate or platter with balsamic reduction drizzled over the top.
