Middlebury to host 6th annual Vt. Chili Festival

This Saturday, Main Street in Middlebury will be closed off-- overflowing with thousands of people and endless amounts of chili from over 50 restaurants caterers and amateurs from around the area.

Amy Ryan is the Vermont Chili Festival chair and Shane Lawton is the chef at Two Brothers Tavern. They appeared on The :30 to tell us about the event. Watch the video for more.

Middlebury's sixth annual Chili Festival is Saturday, March 8, from 1 p.m.-4:30 p.m. on Main Street. Click here for more information.


Vegetable Chili

  • 1 tablespoon vegetable or canola oil
  • 2 cups chopped red onion
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped green bell pepper
  • 2 garlic cloves, minced
  • 1 (15-ounce) can of corn 
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 (16-ounce) cans stewed tomatoes, undrained
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
Heat the oil in a Dutch oven over medium-high heat. Add onion, bell peppers, and garlic; sauté 5 minutes or until tender. Add remaining ingredients, and bring to a boil. Reduce heat, and simmer 30 minutes.
