What's Cooking: Crab Cakes

Chef David Scott with the North Hero House joins us with a crab cake recipe where the crab is the star of the show.

Jumbo Lump Crab Cakes w/Wholegrain Mustard Cream and Shaved Fennel and Herb Salad



Cakes: 1 can jumbo lump crab


            3 Tablespoons of house made mayo

            3 Tablespoons chopped parsley

            Pinch of salt

            2 teaspoons horseradish

            3 Tablespoons of panko

Gently mix as to not break up the crab lumps and form into cakes

Sauce: 1 cup cream

            1 tablespoon wholegrain mustard

Reduce cream by half over medium heat add mustard

Salad: 1 bulb of fennel

           Whole Italian flat leaf parsley leaves

           Juice of ½ lemon

           Drizzle of evoo

           Salt and Pepper

  Slice fennel on mandolin very thin

Add a few parsley leaves and fennel fronds

Squeeze ½ lemon

Drizzle a little extra virgin olive oil just so everything is lightly covered

Salt and Pepper
