Wild Gourmet Food in the WCAX kitchen

BURLINGTON, Vt. - Vermont had localvores before that word even existed and Les Hook and Nova Kim live that lifestyle to the fullest. They run Wild Gourmet Food. Gathering food in the wild, they call it the original organic and sell it in their wild food CSA. They appeared on The :30 to show us how they prepare pan fried wild trout and a wild salad.

Wild Trout - Pan Fry
For Dredge
1/8 cup Morel Powder
1/8 cup Blue Pearl Oyster Powder
2 T Wild Ginger, chopped fine
2 T Wild Leek, chopped fine
2 T Wild Angelica, Hi Brite
Coconut Oil For frying
Salt and Pepper to taste

Wild Salad Dressing
4 oz Organic Coconut Oil
2 T Bragg's Fancy Maple Syrup
2 T Wild Ginger Root, ground fine
2 T Wild Leek, chopped fine
1/2 Lemon
Combine ingredients and let blend.

1/2 lb Wild Watercress, broke up
1/2 cup Wild Violet leaves
1/8 cup Henbit or Wild Watermint
1/8 cup Daylily Shoots-New, chopped
52 ct Sedum, tender tips
4-5 Wild Leeks, chopped fine
1/4 cup Daylily tubers
1/4-1/2 cup Jerusalem Artichokes, sliced
