Summer BBQ side salad

BURLINGTON, Vt. - Memorial Day kicks off summer barbeques.

Chef Anthony Grippo of Blue Bird Barbecue showed us how to make a perfect side salad for your cookout.

Here is the recipe -

1.8 cups kale cut real thin
2. 2 cups carrot grated
3. 2 cups of celery root. grated
4. 2 cups of slaw dressing
      1 cup of mayo
       1/2 cup white sugar
       1/2 cup cider vin
       tablespoon salt
5. pickled onions
       1 cup cider vin
        3/4 cup of white sugar
        2 whole cloves
        2 whole allspice
6. granny smith apple sliced thin

To pickle the onions, bring the spice sugar and vin to a simmer then pour over thin sliced onions in a bowl and cover with plastic wrap for about hour.
