Zucchini week: Pasta with Zucchini, tomatoes and feta

BURLINGTON, Vt. - It's zucchini week on "The :30."
Chef Lyndon Virkler from NECI is making Pasta with Zucchini, Summer Squash, Tomatoes and Feta.  Watch the video for more.



Recipe Title:

Pasta with Zucchini, Summer Squash, Tomatoes and Feta.

ea.

 Medium Zucchini and or Summer Squash

Washed, ends trimmed, ½ inch dice.

Medium Tomatoes, concasse *

Peeled, seeded, diced.*

*To peel and seed tomatoes: use a paring knife to  cut an x on the bottom,  core the stem end, and carefully  drop in boiling water for about 30 seconds. (You can use your pasta water).  Carefully remove to a bowl of cold water with a slotted spoon. When cool enough to handle, remove peels, then slice in half around "the equator" and squeeze seeds out. Dice the tomato and you now have tomato concasse. If you are short on time, just seed the tomatoes and dice. It won’t be quite as refined, but it still works.

Herb or cider vinegar

Salt

Toss above ingredients in a bowl, marinate 30 minutes.  Drain well, reserving liquid*

Red Onions,  minced

small dice

Chopped fresh basil, sage, oregano, or mint.

Chopped Parsley

Olive Oil

Combine with squash  tomato mixture

to taste

Fresh Ground Black Pepper

Linguine,

cooked al dente, drained

Cp.

Diced feta, chevre  or Grated Parmesan or Romano.

Toss warm pasta with cucumber mixture and cheese, season to taste with fresh ground black pepper, salt.  (* Salt only after tasting). Serve warm or chilled.

to taste

Additional cheese

Garnish with herb sprigs, pass additional cheese.

Note: * Because squash and tomatoes have been salted already, add salt sparingly.

Variations:

Vegan Option: Substituted diced tofu for cheese or substitute Vegan cheese.

Other Variations:

Use smoked gouda in place of parmesan.

Substitute cucumbers for zucchini and summer squash.

Use as a base for salad: add cucumbers and other diced vegetables  to the mixture, leave out the pasta and serve on a bed of lettuce. 

Substitute lemon for vinegar, mint for basil, and use as a base for tabbouli
