Zucchini Week: Roasted zucchini salad with tarragon pesto

BURLINGTON, Vt. - Andrea Cousineau is from the Bearded Frog in Shelburne and is making a Roasted Zucchini Salad with Tarragon Pesto. Watch the video to see it happen on "The :30."

Roasted zucchini Salad with Tarragon Pesto

3 small or 2 large zucchini
1 med red onion
25 each cherry tomatoes
Cut zucchini in half then slice thin in 1/2 moons
slice red onion
1/2 cherry tomatoes
toss vegetables in olive oil and salt and pepper
roast on sheet pan at 450 for 10-15 min
let cool completely

Tarragon Pesto
1 1/2 c olive oil
2 cups packed tight tarragon leaves
1/2 cup packed tight spinach
2 TB parmesan grated
1/2 cup roasted garlic with oil
1 TB Lemon juice
Salt and pepper to taste
Mix roasted vegetables in large mixing bowl
add desired amount of pesto
