Chef Julian makes Festival & Escovitch Fish

Chef Julian Perkins from Jamaican Jewelz Catering joins us to make some Jamaican specialties and surprise Tyler Dumont with a cake for his birthday!

Festival recipe

-1 ½ cup all-purpose flour

-½ cup cornmeal

-3 tablespoon brown sugar

-½ teaspoon salt

-2 teaspoon baking soda

-1 large egg beaten

-½ teaspoon vanilla

-approx ½ cup cold water

-1 cup cooking oil

Method:

1. Mix dry ingredients together

2. Add beaten egg & vanilla, mix gently until combined

3. A little at a time add water knead until dough hold together and is nice and smooth

4. Divide into 6 or more equal pieces, then use hands to roll the pieces to a long shape. (try not to thin them out too much, and keep them long fat and some what even)

5. In a deep medium frying pan, heat oil on high then one at a time drop dough in

6. Reduce heat to medium and turn festival every 1 min until they are brown on each sides and cook all the way through.

7. Rut on plate to cool then serve.

Jamaican Jewelz Escovitch Fish

Fish:

-4 Whole snappers or fish of your choice

-Salt + Black Pepper combination to season the fish

-1 Cup of cooking oil to fry fish

Sauce:

-1 SM Onion (sliced ring style)

-1 LG Carrot (Julienned)

-10 Pimento (dried) berries whole

-2/3 cups Vinegar

-1 Whole Habanero (hot) pepper

-1 Cho-Cho (chayote)

-3 LG Sweet Peppers (bell peppers) multi colors ½ of each

-3 teaspoon cooking oil (from oil that was used to fry fish)

-1/8 Cup pineapple juice

-½ teaspoon salt

Method:

1. In a large frying pot, heat cooking oil on high, heat then turn heat to medium, add whole fish to hot oil and fry on either side approx for 5 mins per side. (For fillets or other fish fry until you feel it is cooked)

2. In a medium pot on medium flames;

3. Add 3tsp oil ( from oil that used to fry fish)

4. Add 2/3 cup of vinegar bring to a boil

5. Add carrots

6. Add pimento berries

7. Add habanero pepper

8. Add Cho-Cho

9. Add onion, salt and pineapple juice

10. Lastly add the sweet peppers (bell pepper)

11. After you have added all the above ingredients remove from heat and serve over snapper or fish of your choice.

Jamaican Fruit Cake recipe

-6 ounces or 1.5 cup of flour

-8 ounces margarine or butter

-8 ounces sugar

-4 eggs

-1 pound raisins

-1 teaspoon cinnamon

- ½ teaspoon mixed spice

- ½ teaspoon salt

- 4 ounces mixed peel

- ½ pound prunes (chopped)

-1 cup wine/brandy

-1 teaspoon baking powder

-1 teaspoon vanilla

-finely grated rind of 1 lime/lemon

-2 tablespoons browning (or burnt brown sugar)

Method:

1. Cream butter, sugar, and browning until soft and fluffy.

2. Sieve all dry ingredients together

3. Beat eggs, wine/brandy together

4. Add egg mixture to creamed butter and sugar

5. Add fruits

6. Add flour and fold in. Do not over-beat when mixing.

7. Bake at 350*F for 1.5 hours.

8. Yield: 9' round cake.
