Naturally healthy desserts with Laura Marquis

BURLINGTON, Vt. -

Are you looking for a treat that doesn't have any of the sugar, dairy or gluten found in most desserts? That sounds like a challenge -- one that cook book author Laura Marquis is up for.

Cashew milk

  • 1/2 cup cashew 
  • 5 medjool dates
  • 1/2 teaspoon vanilla 
  • 3 cups water 
  • 1/8 teaspoon cinnamon 
  • 1/8 teaspoon nutmeg 
  • Dash of salt 

Place all ingredients in a blender and blend for 2 minutes

Oatmeal raisin cookies

  • 3/4 cup walnuts
  • 1/2 cup gluten-free oats
  • 1/2 cup raisins
  • 1/2 cup dates
  • 1 vanilla bean pod, scraped
  • 2 teaspoons cinnamon
  • pinch of salt

Peanut Butter Fudge

  • 12 Medjool dates
  • 1 cup natural peanut butter
