Chef Chris makes a vegan mac and cheese

Chef Chris Brzezicki makes a quick and nutritious vegan mac and cheese.

Recipe is as follows:

1 cup of raw cashews (if you buy broken pieces they're cheaper than whole.)
3/4 cup Nutritional Yeast
1/4 cup Oat Flour
1/4 cup Tapioca Flour
1 Tbs. Paprika
1 Tbs. Raw (unrefined) Sugar
2 tsp. Mustard Powder
2 tsp. Salt
2 tsp. Onion Powder (Not onion salt. It matters.)

 1-Place all of this in the food processor and blend till a uniform powder is achieved.
Store covered in a cool, dry place (or in the fridge) This mix will keep at least a month!

 2-When ready to make your mac Get the water for your favorite pasta heating and make the sauce. Mix 1/3 of a cup of dry mix with 1 cup of unsweetened soy or almond milk and whisk over med heat till thickened. When thick cover and remove from heat. Finish pasta and drain. Put pasta back into pot and pour the sauce over it. Season with Salt and Pepper and serve HOT! We like to add steamed broccoli and toasted Almonds. This is a protein rich dish (even without the almonds) that's low in saturated fat (no cows milk or cheese) and high in fiber.
