Whats cooking: Forbidden Chocolate Bread Pudding

Forbidden Chocolate Bread Pudding

1lb Devils Food Cake, torn to pieces, stale
1.5c Whole Milk
1.5c Heavy Cream
1/2c Coffee Liquor
1c Brown Sugar, packed
1/4c Cocoa Powder
1tbsp Vanilla Extract
6 eggs
1/3c Raspberry Puree
4oz Semi-sweet Chocolate Chips
4oz Dark Chocolate Chips – 70% preferred

  1. Tear devils food cake into one-inch pieces and let sit out overnight to become stale.
  2. Preheat oven to 350 degrees.
  3. In medium mixing bowl whisk together milk, heavy cream, eggs, vanilla extract, and coffee liquor.
  4. In a separate bowl whisk together brown sugar and cocoa powder, then combine with egg and cream mixture.
  5. Fold cake pieces into egg mixture and let sit about 20 minutes to fully absorb mixture.
  6. Drizzle 1/3 cup Raspberry Puree into mixture and fold gentle 2-3 times.  
  7. Place mixture in greased baking dish and place in oven for 20-30 minutes or until a toothpick comes out dry when inserted into the center.
