Soup Week: Greens and Garlic Soup

Greens and Garlic Soup

This is a simple soup that is delicious, hearty, satisfying and very healthy.

Serves 2


  • 2 T olive oil
  • 2 cloves of garlic, chopped
  • 1 small tomato, cored and diced
  • 2 sprigs of parsley
  • 1 t smoked Spanish paprika
  • 2 cups of thinly sliced greens: spinach, chard, kale, etc.
  • 2 cups of chicken or vegetable stock (ideally homemade)
  • 2 eggs
  • 2 pieces of toasted crusty bread
  • Salt and pepper to taste


Heat oil in sauce pan over medium heat. Add garlic and cook while stirring until translucent. Add tomatoes, parsley and paprika, sauté for 1 minute. Add greens and stock. Bring to a simmer and cook for a few minutes. Add salt and pepper to taste. Crack eggs into soup and poach eggs. Put 1 piece of toasted crusty bread in each bowl. Ladle soup over bread with one egg per bowl.
