Whats cooking with Tracey Medeiros: Sunshine Smoothie

These smoothies are best enjoyed right away; however, leftovers can be refrigerated for up to three days.  If refrigerating, leave as little air at the top of the container as possible to reduce oxidation.  You can also freeze this mixture.  Add a little lemon or orange juice to the thawed smoothie before serving, to give it a fresh flavor.

Ingredients

1 large handful dandelion greens and flowers, stems removed and discarded

1 1/2 pints organic blueberries

1 cup spring water, plus extra as needed

3/4 cup fresh orange juice

1/4 cup fresh lemon juice

3/4 cup chopped mango or banana

1/2 cup baby spinach

2 whole Medjool dates, pitted

1 tablespoon packed fresh mint leaves, plus extra for garnish 

1 tablespoon shredded unsweetened coconut

1 tablespoon plain yogurt (optional)

1 1/2 teaspoons hulled hemp seeds or maca powder (optional)

Garnish with mint leaves

Method of Preparation

  1. Soak the dandelion greens in a large bowl of cold water for about 30 minutes.  Rinse and drain the greens; transfer to a blender.
  2. Add the blueberries, water, orange juice, lemon juice, mango, spinach, dates, mint, coconut, yogurt, if using, and hemp seeds, if using.  Blend until smooth, adding extra water, if needed.  Garnish with mint leaves. Serve immediately.
